There are many variations of this recipe but the end result is the same every time.  Rich and Creamy mashed potatoes that don’t require gravy. Of course you can add gravy if you so desire!   My earliest memory of having anything close to this was when my Mom made twice baked potatoes.  They were served in the shell of a halved potato and they quickly became my favorite side dish.  Years later we served them at their restaurant the Dominie Huis and later on the famous Noel mashed potatoes emerged as another version of this delectable potato dish. This one has been around forever! It is found in many church cookbooks where we all know some of the best recipes are born. In our family it belongs to Grandma Arla and it shows up at most of our family gatherings. Leftovers are not safe; it’s that dish that is impossible to leave alone. Quick, easy, impressive, and best of all delicious! 2 cups powdered sugar ½ cup butter softened 4 egg yolks (1) 16 oz. container frozen whipped topping, thawed (1) 9” prepared angel food cake torn into bite size pieces (4) 2.1 oz. Butterfinger bars crushed, or more to taste (definitely add more to taste) Using an electric mixer beat powdered sugar, butter, and egg yolks together in a large bowl until creamy. In Hoppenworld we all know what this is; the best crowd-pleasing sandwich you will ever serve! “The Sub” as we so affectionately call it made its first appearance at our annual Super bowl party in the late 90’s with our good friend Kim. It grew in popularity quickly as everyone had left the party with a handwritten recipe for future use. It began to show up at birthday parties, boat trips, and family gatherings on a regular basis. Bring it to your next gathering as an appetizer or main dish. Either way there won’t be any leftovers!
