There are many variations of this recipe but the end result is the same every time. Rich and Creamy mashed potatoes that don’t require gravy. Of course you can add gravy if you so desire!
Scrub the potatoes and partially peel them, or peel completely, or not at all! I actually prefer to partially peel them.
Boil them in Water and 1 tsp of the garlic salt until soft and fork pierces easily.
Place Butter, cream cheese and milk, in the bottom of a mixing bowl and beat until both are melted and mixed in well with potatoes.
Add sour cream garlic salt, minced onion, pepper and mix well again.
Gently stir in shredded cheddar cheese and put in individual serving dishes or a casserole dish of your choice.
If you kept the potato halves intact fill them back up and put on a cookie sheet.
Bake 20 minutes.
Garnish with remaining sharp cheddar cheese, green onion and bacon if desired.
